Healing with medicinal plants is as old as mankind itself. The connection between man and his search for drugs in nature dates from the far past, of which there is ample evidence from various sources: written documents, preserved monuments, and even original plant medicines. Awareness of medicinal plants usage is a result of the many years of struggles against illnesses due to which man learned to pursue drugs in barks, seeds, fruit bodies, and other parts of the plants. Growing food in the north of Sweden is not easy, especially if you are new. My herbal and vegetable garden is expending, experimenting more and more. The warmer days have been nice to spend on a lake, and the first medicinal medicines are harvested. This was the birch bud, and I share a herbal medicine recipe with you for a sore throat.
Birch bud pesto: Take a half liter of birch buds and mix this with 2 cloves of garlic, 1 dl roasted nuts- hazel/sunflowerpits ect. 1 dl of oil – Olive or sunflower, a pinch of salt and some black pepper. optional is to add some cheese – 100 grams.
Mix them in a blender and keep in the refrigerator in a closed glass jar.
To keep it longer good, make sure there is a layer of oil on top of the pesto. You can keep it for a couple of weeks.
