Granja Caimito is a new farm in Andalucia, Spain. It practices Permaculture and Holistic Management. We are trying to restore fertility on 45 ha of Dehesa land that has been degraded over a long period of time. Eventually it plans to offer high quality meat, vegetables and aromatic products.

As Stephan Schwab, the owner says:

“When we purchased the land in 2017 there wasn’t much there. There was no place to stay and no workshop. It was basically a piece of neglected land where cows and pigs could whatever they want. Because of the lack of management the land degraded and fertility got lost. The animals simply ate whatever they could find until nothing was left.

So over the course of 2018 we built a wooden house and moved in by February 2019.

What follows is an ongoing description of what we are doing or what we are planning to do. It should guide ourselves and it may also be entertaining for others. It might even help others to embark on a similar venture.”

The Iberian Pig is where the famous and expensive Jamon Iberico is made from. We try to provide our pigs a natural habitat to live in. They can be pigs as much as they want to.
Since we bought our land and got cows in 2018 we are practicing rotational grazing. In this video you will get an overview of how we do and what the results are so far.
In preparation of the montanera, when the Iberian pigs feed on acorns only, we built a new pig corral. This corral will serve them as shelter during winter and is part of our effort to mimic nature well and still run a productive farm.
This is a small sensation for us in Andalusia. Thanks to our pasture management we have seen growth of green grass during summer without any rainfall for several months. That’s a very good sign telling us that we are on the right track. Watch this video to learn the details and see what else has been growing over summer.
